This past Friday my cousin called and invited us over to their place for a swim day - and considering the minor heat wave we've been experiencing, I took the opportunity to drive Kaykay and I down to my cousin's house - about an hours drive from our place. And boy, was the drive worth it all. Kaykay and I had so much fun in the water; we're planning to make this a regular trip during the summer.
Recently I had the pleasure of eating a dish that a brother made and he was kind enough to share with me the recipe. This was my second time making it and thought to add more ingredients like broccoli, mushrooms, and olives. Mike has declared this is one of his favorite recent dishes. Since Mario came up with this recipe on his own and measured the ingredients to-taste, I couldn't mirror his recipe to the exact, but I believe I came close. I will need to try to perfect it, in the meantime, thank you Mario for sharing this dish with our family!
